Alder ~ Light and delicate, ideal for white meats, fish and seafood and most famous for smoked salmon
Apple ~ Strongest of the fruitwoods combining sweet and fruity tones with a dense smoke flavour. All good all-rounder which works with meats, game and poultry.
Beech ~ A light, mild hardwood with a slightly nutty flavour. A subtle companion to white meats and fish and a great alternative to oak for salmon.
Cherry ~ Milder fruitwood than apple and suitable partner to lamb and gamebirds as well as poultry and fish.
Chestnut ~ Both sweet and intense, chestnut is a stronger alternative to fruitwoods and works well with meats and game, a natural partner to turkey.
Hickory ~ A strong flavour commonly used with pork and bacon, but very versatile giving a robust flavour without bitterness. Try with nuts, mackerel and beef.
Jack Daniels Made from the charcoal used as a filter during the distillation of Jack Daniesl bourbon. Arobust flavour for red meats.
Maple ~ Mild to medium hardwood with slight sweetness which works well with pork and poultry. Lovely with delicate trout.
Oak ~ The most popular and versatile of all wood smoke flavours, works with most foodsproviding a heavy smoke flavour. Great for red meats or blend with a fruitwood for poultry and fish.
Whisky Oak ~ Oak Chips tumbled and soaked in a blended whisky. A strong flavour with even extra punch.
